Butternut Squash, Apple, and Tahini Rice Salad

Cooking instructions

* Step 1

Preheat oven to 425 degrees

* Step 2

Cook rice in instant pot or rice cooker

* Step 3

Combine butternut squash, apples, onions, 2 tablespoons herbs de Provence, salt, and pepper and bake until golden brown

* Step 4

Combine ingredients for dressing

* Step 5

Mix the roasted vegetables and fresh spinach with the rice. Add the dressing and serve at room temperature
