Introduce
Ingredient
2 tbsp
olive oil
1 lb
chicken breast diced
1 cup
chicken broth
1/2 tsp
kosher salt
8 oz
cream cheese diced
Cooking instructions
* Step 1
Turn on instant pot to high saute setting. When pot reads hot add in the olive oil.
* Step 2
Add in onion and cook for 2 minutes. Add in chicken and cook until meat turns white.
* Step 3
Add in the broth. Scrap bottom of pot and remove any bits that may be stuck.
* Step 4
Add in jalapeno, taco seasoning, diced tomatoes, salsa, and salt. Mix well.
* Step 5
Add in cream cheese. Do not mix.
* Step 6
Put on lid making sure vent lid is closed. Cook for 10 minutes then allow a 10 minute natural release.
* Step 7
Remove lid. Turn off keep warm and hit the saute button.
* Step 8
Stir until cream cheese is melted. Switch back to keep warm.
* Step 9
Add in the monterey jack cheese. Still untill melted.
* Step 10
Plate and top with more monterey jack cheese and avocado.
* Step 11
