New Orleans Style Red Beans & Rice (Instant Pot)
Adapted a recipe that normally takes 8 hours and reduced it to about two in the Instant Pot. I grew up eating this meal as a staple. I learned how two previous generations fixed it and tweaked it a bit to make it mine. It tastes just like my childhood!

Cooking instructions
* Step 1
Add onion, bell peppers, celery, garlic, beans, bay leaves, thyme leaves, chicken broth & water to the Instant Pot.
* Step 2
Stir until well combined.
* Step 4
Turn steam release handle to ensure pot is sealed.
* Step 5
Press PRESSURE COOK—Normal; Pressure Level: High; Time: 25 minutes.
* Step 6
Press steam release handle down for Quick Release.
* Step 8
Rinse lid under cold water.
* Step 9
Stir sliced Andouille into the pot.
* Step 10
Press PRESSURE COOK—Normal; Pressure Level: High; Time: 15 minutes.
* Step 11
Allow Natural Release (about 30 minutes).
* Step 14
Cook until combined, stirring occasionally.
* Step 15
Press Cancel (Keep Warm: On)
* Step 16
Mash lightly with potato masher.
* Step 17
Add Tabasco, salt, & black pepper to taste.
* Step 18
Serve topped with a scoop of cooked white rice.
