Smoked Baked Beans

Got this recipe from a temple worker

Cooking instructions

* Step 1

Preheat your smoker to 250 degrees using any mild or fruit wood pellets. I like pecan

* Step 2

Preheat a 12 inch cast iron skillet over medium heat. Cook bacon pieces for 2-3 minutes per side. Long enough to render fat, but not long enough to crisp thoroughly

* Step 3

Remove bacon pieces to a plate with a paper towel on top to drain. Leave bacon grease in pan and add onion and peppers. Cook 3-5 minutes, stirring great, until they have softened and onions are slightly translucent

* Step 4

Pour cans of beans with liquid into a pan. Add barbeque sauce, brown sugar, apple cider vinegar, Dijon mustard and molasses. Stir to combine.

* Step 5

Place slices of bacon, cooked onion and peppers on top of the beans and place in the smoker.

* Step 6

Smoke uncovered for about 3 hours or until nearly all of the fat has rendered from the bacon and service while warm
