Sauted nopales
I hated nopales when I was young because they can be slobbery. But when I grew, I learned how to cook them properly (tips below)
Ingredient
Food ration :
4 servings
Cooking time :
40 mins
Cooking instructions
* Step 1
Wash and chop the nopales in 1x1 cm squares.
* Step 2
Put the chopped nopales in a strainer and rinse them with cold water for 40 seconds to drain the slobber. Then keep them in the sink draining for 10 minutes without water. This step is key.
* Step 3
Boil the nopales until cooked (they become soft.) It normally takes about 10 minutes. Beware of the foam spilling out of the pot while boiling.
* Step 4
Put the nopales back in the strainer and repeat step 2, for 10 more minutes. (The boiling process takes more slobber out...)
* Step 5
Heat (medium) a pan with oil. Chop the onion and the chili pepper and put them in the hot pan. Cook them until the onion is golden.
* Step 6
Add the cooked nopales to the pan. Increase the heat to high. Add the salt and pepper. You might need to add more oil. Saute them for 5 minutes while stirring.
* Step 7
Chop the stock cube with a knife so you make it powder, and add it to the pan. Stir and keep cooking until the powder dissolves (about 3 more minutes.)
* Step 8
You are done! Add a bit of lemon juice just before serving.
