Uttrakhand urad dal vadas

Black gram or urad dal vadas... a special snack from the state of Uttarakhand. These vadas/pakoras/fritters are made on almost all the auspicious occasions, be it s wedding or any other celebration. Being from Uttarakhand I have enjoyed it since childhood. These vadas are a bit different from South Indian vadas which are generally made with skinned urad dal whereas these vadas are made with whole black gram (with skin or husk). To make these vadas whole urad dal is soaked in water overnight and ground in a mortar and pestle to achieve that slightly coarse texture(But you can always use a grinder). Then it's seasoned with spices and fried to perfection. It is usually served with green(Mint-coriander) chutney and makes a great tea time snack as well.
