Lobia / black-eyed peas salad
What do you do when you realise that you have boiled extra legumes(ready lobia / black eyed peas) than needed..? Well what I do is probably the easiest and the least creative way of using leftovers but the outcome inspite of being simple, is a stunner. Actually my husband loves Lobia ki sabzi, even I love it but recently I have put on a few kilos and try to eat my favourite food in a healthy way, using minimum oil and spices. So when I found a bowl full of Lobia lying in my refrigerator all I thought of doing was making a simple Lobia salad with a basic olive oil, lemon, black pepper and salt dressing instead of Lobia curry. You can make this salad as a side when you have unexpected guests or when you feel hungry and don't want to cook. So here is the quick recipe... This is my next entry for Abanti Singh's giveaway #abantiskitchen
