Thai Mango Coconut Jelly

Ingredient

2 tbsp

agar agar

2/3 cup

water

4 tbsp

sugar

leaves

Few mint

2/3 cup

coconut milk

Pinch

salt

Cooking instructions

* Step 1

In a blender puree mango. Soak agar agar in water for 10 minutes

* Step 2

In a pot add agar agar with water & boil till it dissolves. Add sugar & mango puree & whisk until smooth.

* Step 3

Cook for few minutes. Remove from heat & pour in mould or glass if you serving individually.

* Step 4

Add mango slices & push them down & keep it to set.

For coconut layer again soak agar agar for 10 minutes

* Step 6

In a pot add agar agar & water & boil till it dissilves. Add sugar & salt & mix all well.

* Step 7

Last add coconut milk stir & mix well

* Step 8

Remove from heat. Pour over set mango layer & refrigerate. Add mint leaves & serve cold.
