Pasteles de platano

Cooking instructions

* Step 1

Soak yuka and plantain in salted water for 5 minutes. Using the small side of ur cheese grater grate plantain and yuka , add the milk and a dab of achiote and a pinch of salt. Mix these ingredientes well then set aside..

* Step 2

Chop the pork, ham, and bacon into small pieces and add olives, raisins, chick peas, onion, bell peppers, tomatoes and minced cilantro, achiote, oregano. Add half cup water and cook for 20 mins.

* Step 3

Clean banana leaves and cut into 10" pieces. Grease the inside of each leaf and put about 1/3 cup of the plantain mix in the middle spread it out a little, then add about 2 tbsp of the filling on top.

* Step 4

Fold leaf edges over each other like folding a tamalé.

* Step 5

Tie 2 pasteles pouches together with string. Boil for 45 minutes in salted water, remove from water and drain before serving. Serve HOT....
