Cooking instructions
* Step 1
heat oil in fry pan add mushrooms and jalapenos and sautee till mushrooms are golden brown
* Step 2
add beaten eggs to the pan and lift sides and tilt pan to allow what egg is stuck in center to go to pan
* Step 3
when egg looks mostly cooked add cheese and flip half of the egg up on the other half
* Step 4
let sit for about 1-2 minutes so cheese melts then transfer to plate
* Step 5
slice avacado and place on top
* Step 6
enjoy as is or in a heated tortilla as a burrito
