* Step 1
beef intestine normally are sold clean, but its always a good idea to clean them a second time at preperation
* Step 2
to clean place in plastic tub with water and let saok 5 minutes, under running water allow water to run inside intestine 12 in pieces at a time.
* Step 3
cut all 12 inch piece into 2 inch pieces.
* Step 4
in large fry pan add oil, heat then add intestine. cook until almost crunchy, takes a while because of all the liquid.
* Step 5
salt to taste , add salt almost at finish.
* Step 6
enjoy in heated corn tortilla with salsa of choice, chopped cilantro, and chopped onion and lime juice.
