Quick lemon rice

Lemon rice is very light, fragrant , healthy yet tasty rice preparation. The refreshing taste of lemon & the robust aroma of curry leaves make the dish delicious .It can be a great option for breakfast, evening snacks or a light brunch menu .

Cooking instructions
* Step 1
First, cut the lemon into halves & squeeze the juice of half of the lemon. Then add the lemon juice & salt to the cooked rice & mix thoroughly. Keep this rice aside.
* Step 2
Now in a pan heat up the oil & add pinch of Asafoetida, mustard seeds & 8-9 curry leaves respectively. Let it splutter. Then add the peanuts & fry until golden brown.
* Step 3
Now add some turmeric to the oil & mix. Then add the lemon juice infused rice & mix everything together for a couple of minutes.
* Step 4
Once all rice grains turn yellow add 1 teaspoon ghee to the rice & mix for a minute. Finally, add the juice of remaining half lemon & the rest of the curry leaves. Give everything a good mix & turn off the heat. Serve with roasted papad & pickle.
