Chicken Chap

#nonv Chicken chap is a mughlai dish & this is a real delight for non-veg lovers. This preparation not only look great but tastes even better. Preparation is very easy & it goes well with rumali roti, lachha paratha & biriyani .

Ingredient

40 minutes
1 tablespoon

Ginger-garlic paste

1 teaspoon

red chilli powder

1 teaspoon

salt

1/4 teaspoon

sugar

1/2 teaspoon

rose water

2-3 drops

mitha attar

7-8 strands

saffron

1/2 cup

ghee

2 tablespoon

refined oil

Cooking instructions

* Step 1

First clean the chicken pieces & make 2-3 deep gashes over the chicken pieces. Now marinate the chicken pieces with yogurt,onion paste, cashew-poppyseed paste,red chilli powder,sahi garam masala, Ginger-garlic paste, salt,sugar & 2 tablespoon of oil. keep this marinated for at least 2 hours in the refrigerator.

* Step 2

After 2 hours heat up the ghee on a pan then temper it by adding peppercorns, cinnamon, cardamoms & bay leaves.wait until the aroma comes out. Then place only the chicken pieces into the ghee & fry both side of the piece for 3-4 minutes.

Now add the marinade to the pan & spread evenly over the chicken pieces. You don't need to stir much for this recipe, just turn the chicken pieces occasionally. Now cover up the pan & let the chicken cook for 20 minutes. Uncover the pan in between to check if the gravy stuck to the bottom or not. Keep the flame between medium to low.

After 20 minutes check if the chicken is done or not, then add saffron soaked warm water, rose water & mitha attar & cook for another 10 minutes...keep the flame low.

Once the chicken pieces are properly cooked, turn off the flame & serve it with paratha or biriyani.
