Simple Thali

Cooking instructions

* Step 1

For roti :- Combine the flour, 1 tbsp of oil and salt in a bowl and knead into a soft dough using enough water. Keep aside for 15 to 20 min.Knead again using remaining ½ tbsp of oil and little water till the dough is smooth and elastic. Cover and keep the dough aside for 15 to 20 minutes.

* Step 2

Divide the dough into 8 equal portions and roll out each portion of the dough into a thin circle of 150 mm. (6”) diameter using a little whole wheat flour for rolling.Heat a non-stick tawa (griddle) on a high flame and when hot, place the roti gently over it. Cook it till small blisters appear on the surface. Turn over the roti and cook for few more seconds. Cook it on an open flame till it puffs up and brown spots appear on both the sides.

* Step 3

Repeat with the remaining dough portions to make 7 more rotis. Smear ghee on top and serve hot.

* Step 4

For mint chutney:-Take a mixer jar add all the ingredients now grind it for 5 min.pudina chutney is ready to serve.

* Step 5

Besan wali bhindi :- Wash the lady finger (bhindi)and let it dry. Make a cut in each bhindi lengthwise.now in a pan add oil,add Fenugreek seeds,add turmericpowder,add red chilli powder, add salt,add coriander powder,add mango powder,add onion mix it well and cook for few min.now add bhindi mix it again now add gram flour and mix it properly and cover with plate and lid on low flame.now cook for 5-7 min.now open the lid switch off the gas.bhindi is ready to serve with chapati.

* Step 6

Mushroom do pyaza:- Combine all the ingredients mix it well and cover with plate and cook for 10 min.on medium flame.now mushroom do pyaza is ready.

* Step 7

Tamater ki chutney:- Wash tomatoes thoroughly and dry them until the water is dry. Remove its stem and cut it into large pieces. Grind the grated tomatoes into a mixer jar and grind them fine. Put Kadhai on gas. Put oil in a kadhai and let the oil warm.After heating the oil, add cumin seeds to it and fry it. After this, add turmeric powder and fry it lightly.

* Step 8

Add tomato paste, red chili powder, plain salt, and jaggery in it. Mix all the ingredients well.Cook the chutney well with tomato and cook until the chutney is thick enough.tomato chutney is ready.

* Step 9

Dal Firstly in a pressure cook toor dal and water for 5 whistles.now in another pan heat 1 tbsp ghee and splutter jeera, saute well.further add turmeric, ½ tsp chilli powder saute on low flame.add the cooked dal along with salt. mix well. Dal is ready.

* Step 10

For salad:- Chopped cucumber and chopped onion in a mixing bowl and sprinkle salt.
