Vegetable Fritatta
A quick and delicious meal. You can add whatever you have on hand: cooked bacon, another type of cheese, corn, broccoli etc. Just keep the moisture content low

Cooking instructions
* Step 1
Heat the oil in a large shallow frying pan (I used a crêpe pan). Add diced shallots
* Step 2
As soon as the shallots get translucent, add peas. Fry for about a minute
* Step 3
In the meantime, whisk the eggs with salt, pepper and mustard. Season to taste
* Step 4
Pour the egg mixture over the vegetables. Stir to distribute evenly, then let it set
* Step 5
At this point, you can either put the mixture in the oven (if you have an ovenproof pan) or continue cooking it on the stove. If you choose the latter, cover the pan with a lid so you won't need to flip the fritatta
* Step 6
Scatter diced cheese on top and let it melt while the fritatta cooks (mine took roughly 15min) over low heat (your lowest setting)
* Step 7
Then simply serve warm or cold. Enjoy :)
