Italian Chicken Braise
It is very much a weightwatchers recipe with a few ingredient tweaks that I made.
Cooking instructions
* Step 2
Toss the potatoes wedges, garlic cloves and fennel together in a large roasting tin and spray with cooking spray. Roast in the oven for 15 minutes or until it starts to brown.
* Step 3
Heat a non-stick frying pan over high heat, spray with cooking spray then brown the drumsticks for 2-3 minutes on each side.
* Step 4
Add the tomatoes to the pan then add the drumsticks into the roasting pan aswell. Pour the chicken stock or broth into the roasting pan. Season with salt and pepper and cover with foil, fold it around the edges of the tray.
* Step 5
Reduce the oven temperature to 180c and cook for approximately 40-45 minutes or until the vegetables are tender and chicken cooked through.
* Step 6
Remove foil and add it back into the oven for 10-15 minutes until the chicken and vegetable start to lightly brown on the top.
* Step 7
Serve with a side salad or some boiled vegetables.
