Truffle or Potato Stew
Truffle's grow wild and underground in portugal. They look like a potato but are lighter in weight. They have an earthy taste a bit like a mushroom. Substitute the truffles for potatoes, It's just as good.
Cooking instructions
* Step 1
Heat the olive oil in a medium pot with the bay leaves.
* Step 2
Fry the onion and garlic until lightly and slightly browned.
* Step 3
Add the water and bring to the boil.
* Step 4
Reduce to a low to medium heat and add the truffle's.
* Step 5
Simmer for 15 minutes then add the wine, tomato paste, chilli and salt.
* Step 6
Add more water as and when if it simmers down to low.
* Step 7
Simmer for 20-25 minutes stirring occasionally.
* Step 8
Add the chorizo and simmer for a further 10 minutes.
* Step 9
Add the parsley 5 minutes before turning the stove off.
* Step 10
Check seasoning and serve.
* Step 11
Serve over rice or as it is.
