Eggplant with Balado sambal

A very simple recipe for lunch, easy to make and very delicious, perfect for breakfast, lunch or dinner, serve it with warm rice and you ready to go! #eggplant #sambal #indonesia

Chili

Shallots

Tomato

Cooking instructions

* Step 1

Cut the eggplant lengthwise, sear it with a little bit of oil until it's a bit tender. Set aside

* Step 2

While the eggplant is cooking, in a food processor add chilies, garlic, shallots, and tomato. Blitz few times, until you got a rough chop consistency.

* Step 3

Pre-heat pan, add oil, chili mixture, and keffir lime leaves to the pan, sauté few minutes until it fragrant.

* Step 4

Once it's fragrant, add mushroom powder, then do a taste check and then add cooked eggplant, cook it for 10 minutes in medium low heat.

* Step 5

Once it's done, serve it with warm rice!

* Step 6

Tip : If you want the sambal to be a little saucy, you can add water to the sambal before you add the eggplant.
