Meals for One - Garlic Mushroom Pasta (VG)

Sometimes you just want to eat something mild, comforting and gentle...

Ingredient

Food ration :

1 servings
1/4 tsp

dried sage

1/2 tsp

black pepper

1 tbsp

olive oil

to taste

Salt

Cooking instructions

* Step 1

Bring a saucepan of water to boil and bring wholewheat pasta to a simmer. Time it according to packet instructions (mine takes 12 mins)

* Step 2

Heat olive oil in a frying pan and sauté onions, garlic and caraway seeds together until aromatic

* Step 3

Chop mushrooms into pieces of about 2cm and add to frying pan. Sauté until wilted and well coated in onions and garlic

* Step 4

Add the rest of the seasoning (sage and black pepper). If mixture looks very dry, moisten it with a bit of water from the pasta saucepan

* Step 5

Drain pasta, combine with mushroom mixture and add salt to taste!

* Step 6

Optional: stir in grated cheese for a non-vegan option. Something mild like goats cheese would work best so as not to overpower the subtle flavour of the mushrooms
