Simple chicken casserole with vegetables

I cooked this in the office yesterday - inspired by a chicken recipe posted on Spanish Cookpad - and we all loved it so am sharing it in English too 😊🇬🇧

Cooking instructions

* Step 1

Wash amd chop the peppers, onion and garlic. Heat a little olive oil in a large pan and cook the chopped veg for five minutes over a low heat

* Step 2

Add the chicken pieces and brown them. Then add the wine, heat up the water in a kettle, add some to a cup and dissolve the veggie cubes and add that plus the rest to the pann. Turn up the heat, add the bayleaves and peel and chop the potatoes, carrots and grate the ginger.

* Step 3

Add them to the pan, cover and bring to a boil. Add a teaspoon of sugar to the chopped tomatoes and stir well

* Step 4

Add the sweetened tomato, stir, cover again and leave to simmer over a moderate heat for 30 minutes. After 30 mins, take the lid off, turn heat up to maximum and leave to bubble away until the sauce has thickened
