Avocado, smoked salmon and pickle sandwich

Avocado, smoked salmon and pickle sandwich

Sometimes sandwiches can be a lifesaver and today this was mine. I rushed off to work this morning without remembering to take something for lunch. By 4pm I was pretty desperate so came home and thanks to the ingredients in the fridge made this sandwich. It tasted amaaaazing, probably in part because I was so hungry (I love that feeling). Here it is!!

Ingredient

Food ration :

1 serving

Cooking time :

5 mins
2 slices

bread

1/2

lemon

1 handful

lambs lettuce

Cooking instructions

* Step 1

Mash the avocado. Add lemon juice and salt and pepper

* Step 2

Spread on to 2 slices of bread

* Step 3

Add the salmon on to one slice. Squeeze some more lemon juice over it

* Step 4

Thinly slice the gherkins and place on the salmon

* Step 5

Wash the lambs lettuce and place.on top

* Step 6

Add the chilli flakes

* Step 7

Cover with the other slice of bread and enjoy!!
