Malabar Nei Choru/ Ghee Rice

Malabar special rice which tastes best with Chicken , Mutton curry or any Coconut based curries and there is never reason required to gorge on this delicious rice

Cooking instructions
* Step 1
Clean and soak rice for 30 minutes. Drain excess water and keep it aside
* Step 2
Heat 2 tbsp ghee in a pan,fry cashews until golden brown, keep it aside.
* Step 3
Now add raisins and saute until puffed up. Drain and keep it aside
* Step 4
Now add the onions in same pan. Saute onions until crisp and brown. Drain and remove the onions. Keep it aside
* Step 5
Add 1 tbsp ghee in same pan. add all whole spices and saute until aromat
* Step 6
Add rice and saute for 3-4 minutes.
* Step 7
Add water with salt and mix well. Water should be slightly salty
* Step 8
Simmer, cover and cook until water is absorbed and rice is done
* Step 9
Gently fluff the rice. Garnish the rice with fried cashews, onions, raisins and coriander leaves.
* Step 10
Serve warm with curry and raita
