1/4 cup

lemon juice

1/4 cup

lime juice

Cooking instructions

* Step 1

Grate the entire head of cauliflower (stem and leaves omitted), so that it resembles quinoa or rice. Hand grater or food processor.

* Step 2

Dice tomatoes and finely chop cilantro.

* Step 3

Mix together the tomatoes, cilantro, and grated cauliflower.

* Step 4

Add in the lemon juice, lime juice, sea salt, black pepper, and garlic powder. Mix well.
