Warming Carrot & Parsnip Soup πŸ₯•

I had a bag of carrots and a bag of parsnips that desperately needed using up. I wasn’t going to enter this into the comfort food challenge but as it was cooking the smell was just amazing. And it made me happy, I love autumn and this soup really is like a hearty (albeit healthy) hug πŸ€—

Cooking instructions

* Step 1

Gently fry the onion in olive oil for ten minutes. Add in the garlic and the chopped veg. (Ignore the pepper in the photo I decided against adding that in πŸ˜†)

* Step 2

Give it all a stir and keep cooking for another ten minutes items.

Pour in the stock and add your rosemary stalks. Put the lid on the pan and cook y til the veg is very tender (30-40 minutes).

* Step 4

Remove the rosemary stalks then blend until smooth.
