Silky Smooth Mashed Cauliflower
Cauliflower makes a great substitute for mashed potatoes. The key to this dish is to cook the cauliflower until it is fork tender, but not overcooking it so it becomes waterlogged. It then has to be dried off before blending. #seasonalcooking
Cooking instructions
* Step 1
Core the cauli and cut the florets into even sized pieces. Boil in salted water for 10-15 mins. This time depends on the size of your florets. Check the cook at 10 mins then every few minutes until a fork slides in cleanly.
* Step 2
Drain the cauliflower and let the florets sit in the sieve over the pan they just cooked in. The residual heat will help to dry off the florets.
* Step 3
Now transfer to a food processor - you can mash by hand but a processor gives an amazing smooth texture.
* Step 4
Blend with the oil, coconut cream and a pinch of salt and pepper. Scrape down the sides with a spatula and blend again to really smooth.
* Step 5
Transfer the mash to an oven proof dish and grill or pop in a hot oven for 10 minutes. You can top with cheese before grilling, or just drizzle with olive oil afterwards like I did to keep it dairy free.
