Smokey Lemon Roasted Mediterranean Veg
#eattherainbow I served my veg with roasted salmon and it was so full of flavour!
Cooking instructions
* Step 1
Use a sharp knife to cut the corn from the cob. Then lay all the veg out on a foil lined tray, make sure the edges of the foil are turned up to catch the roasting oil and veg juices.
* Step 2
Drizzle with olive oil and sprinkle with paprika, salt and pepper.
* Step 3
Roast for 25-30 mins. Just before serving, sauté your spinach in a small pan for a few minutes, just enough to wilt it.
* Step 4
Spoon the veg onto a plate and spoon all the oils and juices from inside the foil over top. Squeeze the roasted lemon over the top.
* Step 5
I served mine with salmon and honestly it goes perfectly.
