Simplified Braised Red Cabbage

I was at the local farm shop yesterday choosing vegetables to go with my roast chicken and I spotted the red cabbage. My husband is trialling cutting onions and garlic from his diet currently so I had to make an alternative version of my traditional braised cabbage, but I added more vinegar and salt to help add some sharpness and balance. It turned out well thankfully! A lovely #roastdinner side dish

Cooking instructions

* Step 1

Add all of the ingredients to the pot with a splash of water to stop the base burning at the start while the cabbage is dry.

* Step 2

Give it all a good stir then cook on the hob over a low heat for 3-4 hours. Stir it every now and again adding a splash of water if it looks dry. Taste the cabbage after a few hours and if it’s too sweet add a touch more vinegar. If too sharp add some more sugar.

* Step 3

Lovely served alongside roasted meats and freezes well too.
