Mini Rainbow Tomato & Hummus Tarts
Well these are a total cheat, but they’re so good I’m not even sorry 😂 I found lovely sweet rainbow tomatoes in M&S, and baked them in ready made pastry cases with a layer of hummus in the base. Best eaten having cooled to just above room temperature (I think). Btw we have over 130 recipes entered into our #eattherainbow vegetable recipe contest and the dishes have been really inspiring! Thank you all for getting into the spirit of the contests and being so amazingly creative 😍 2 more days to go so there’s still time to enter!!
Cooking instructions
* Step 1
Put a layer of hummus in the base of the cases, then slice the tomatoes and place in the cases as shown in the pictures.
* Step 2
Bake at 190 C for about 15 mins, you don’t need to cook the cases but just enough time to soften up the tomatoes nicely.
* Step 3
I’m not a massive fan of hot hummus so I let the tarts cool again before eating.
