Butter Bean & Tomato Soup

This tasty soup costs just pennies to make and can be rustled up using frozen onions and store cupboard basics. The cost of the soup works out at about 40p a portion. You can substitute the veg stock for chicken stock or even water if needs be. #lunchideas #storecupboardcooking

Cooking instructions

* Step 1

Gently fry the onions and garlic on a medium heat, in oil, for 5 mins until they turn translucent and are starting to soften.

* Step 2

Add the herbs, salt, pepper and stock, tomatoes (tinned and fresh) and butter beans to the pan and allow to simmer, partially covered for 15 minutes.

* Step 3

Allow to cool slightly before blending. If you don’t have a blender, then serve as a rustic, chunky soup.
