Lemon Roasted Chicken with Potatoes

This recipe was inspired by a dish I saw in a magazine a few weeks ago. The potatoes roast underneath the chicken, in the meat juices, garlic and lemon. It’s a lighter version of a roast dinner, for these warmer evenings. #glutenfree

Cooking instructions

* Step 1

Cut the potatoes into medium sized chunks and par boil in bubbling salted water for 10 mins

* Step 2

Drain the potatoes and let them sit in the colander over the hot pan to dry them off a little. Then add them to a large roasting tray.

* Step 3

Flatten the garlic with the side of a knife, add it to the roasting dish with the oregano and lemon quarters

* Step 4

Season the veg with salt and pepper, the lay the chicken on top. Drizzle with the olive oil. Season again then roast for 1 hour at 190’C
