Fruit Cake

This is the Indonesian version of Fruit & Nut cake (no nuts in my photo though). It's using a mix of sugar and dark and sticky palm sugar. You need to shave or shred the palm sugar to make it easier to beat.

Cooking instructions

* Step 1

Soak fruit in water sugar mixture leave it for 3 hours

* Step 2

Mix egg yolk, sugar, oil and vanilla until well combined

* Step 3

Pour the fruit and half of the liquid, until well combined. Mixture will be very thick

* Step 4

Beat egg whites and a tsp vinegar (optional) until thick but not dry

* Step 5

Fold into egg yolk mixture until well combined

* Step 6

Bake in preheated oven 160'C for 45 minutes in a pan that's lined with parchment paper, oiled and dusted with flour.
