Daddy’s yummy egg kurma

This is recipe my dad and me cooked today.As he was rushing for his dialysis , we thought lets make this as its easy and quick and its so yummy. Goes well with rice or bread

Cooking instructions

* Step 1

Firstly grind all the ingredients listed above “TO GRIND” and set aside.

* Step 2

Next heat up a pan and pour some oil about 5 tbsp (You do need more oil as its curry based) and add all the ingredients which are listed “TO TEMPER” once the onions is slightly brown add the coarse paste and keep stirring

* Step 3

Keep stirring the coarse paste so it doesn’t burn, at this point add 1/2 tbsp butter to it. This helps to enhance the flavour. Once you have noticed the oil starts separating add the tomatoes to this, and stir it again.

* Step 4

Next add the tamarind water and the milk to this,keep stirring so it doesn’t burn. Allow it cook till the oil separates again, at this point add all the vegetables (potatoes,cauliflower,carrot or any vegetables you like).

* Step 5

Keep stirring the vegetables and last but not least add water to this mixture (add the water according to how much curry do you need). Cover the lid and allow your vegetables to cook, once the vegetables are cooked add in the boiled eggs to this and let it cook for another 5 mins (if the water is less add it some hot water)

* Step 6

Finally add the coriander leaves for garnishing and voila you have a yummy egg kurma. If you are a vegetarian you can skip the egg and add some green peas and other vegetables for your own likings.
