Salmon Belly in Japanese Miso Broth

This is one of my favorites at the moment. Delicious!

Cooking instructions

* Step 1

Sauté garlic, onions and ginger in oil.

* Step 2

Add 1/2 cup water and bring to a boil.

* Step 3

Add the rest of the water (broth). Season with salt and peppercorns.

* Step 4

Drop in your frozen or fresh salmon.

* Step 5

Add the Japanese miso packets and their garnish. Make your own miso broth or use packets- I use this one, I like the taste. Other brands are also suitable. You can buy from an Asian store if it’s not available in your supermarket.

* Step 6

Taste if it’s to your liking. Add the chicken broth cube if the soup lacks flavor.

* Step 7

Add the hard veggies first, submerge in the soup. Then the leafy vegetables just lay it on top. Cover and cook until done.

Serve hot with rice, if desired.
