Soft-baked pretzels & homemade nacho cheese sauce

Cooking instructions
* Step 1
Whisk instant yeast and water. Let sit for 2 minutes
* Step 2
Whisk in salt, brown sugar and 1 tbsp of melted butter
* Step 3
Slowly add in the flour 1 cup at a time while needing the dough using a dough hook.
* Step 4
Once ready (no longer sticky), place the dough on a floured surface and knead for 5 minutes by hand.
* Step 5
Shape into a ball and cover with a towel for 10 minutes
* Step 6
In the mean time preheat oven to 400F and bring the baking soda and water to a boil. Grease parchment paper with butter.
* Step 7
Cut dough into 12 peices and roll each of them into a 30 cm rope. Form a circle with the dough by bringing the 2 ends together at the top of the circle. Twist the ends together and bring them back down towards yourself. Press them down to form a pretzel shape.
* Step 8
Once all are formed. Drop each pretzel into the boiling water one at a time for 20 seconds each. Do not exceed 20 seconds or you will have a metallic taste in your pretzel.
* Step 9
Place pretzel on baking sheet. Sprinkle with coarse salt. (Less is more)
* Step 11
Remove from oven and let cool
* Step 12
Melt 1/4 cup of butter in a saucepan
* Step 13
Add flour and stir constantly.
* Step 14
Add milk stirring constantly until sauce thickens
* Step 15
Add cheddar cheese and let it melt.then add hot sauce, cayenne and salt and pepper.
