Mushroom Chicken Rice
Adapted from Claypot Chicken Rice. This recipe is cooked using a 32cm wok pan on stove. Can be adapted to rice cooker.
Ingredient

2 adults + 2kids

Cooking instructions
* Step 1
Marinade chicken for about 30 to 60 minutes
* Step 2
Add cooking oil in pan. Fry shallots till golden brown. Add in dried shrimp and sausage (optional) when shallot starts browning.
* Step 3
Add in mushroom. Stirfry for a bit for the mushroom flavour to release.
* Step 4
Add in chicken without the marination sauce. Reserve the marination sauce for the next step. Stir fry till chicken is partially cooked.
* Step 5
Add in rice and fry the rice for a bit. Arrange the rice evenly on the pan
* Step 6
Add some water into the reserved sauce to dilute. Pour them into the pan. Top up with more water until rice is fully covered.
* Step 7
Once the water starts boiling, lower the heat and boil for about 30minutes until rice is cooked
* Step 8
Rice can be served with a vegetable dish and dinner is complete
* Step 9
Rice can be garnished with spring onion
