Cooking instructions
* Step 1
Take maida,wheat flour,soji in big bowl,mix well,add salt,ghee,oil,carom seeds,black pepper powder,green chili garlic paste,.Mix everything well.
* Step 2
Divide into three equal parts,now add water in white part, and knead tight dough,add 2drops ghee knead,cover,rest for 10 minutes,In second part add spinach purée mix well knead dough add 2 drop of ghee knead,cover,rest for 10 minutes,third part add beetroot pulp mix well knead dough,add 2 drop ghee knead,cover,rest for 10 minutes.after 10 minutes again knead with ghee for softness.
* Step 3
Prepare saata,divide all dough into two portion.roll it,apply saata (ghee &rice flour mixture) on white roll,spinach roll & beetroot roll.on white roll keep the beetroot roll,then spinach roll,again white roll.
* Step 4
Roll all four,cut in small pieces.
* Step 5
Take one piece dust in maida,roll thick mathri,make marks with a fork.This help avoid the mathris puffing up while frying.
* Step 6
Put the mathris in medium hot oil, fry mathri on low flame till they turn golden on both sides.serve in serving plate.😊🌈
* Step 7
If you like sprinkle chat masalo on top of mathri.(Happy New year)
