Vichyssoise with Spinach

Cooking instructions
* Step 1
Saute onions in butter until transparent.
* Step 2
Add in potatoes, broth, water, and cubes. Cook this down on medium heat for about 20-30 minutes until potatoes are nice and soft.
* Step 3
Add in spinach, cover the pot and let it wilt down.
* Step 4
Lower the heat and stir in the milk gently and slowly.
* Step 5
Use an immersion blender to blend the soup to your desired texture.
* Step 6
Stir in the Greek yogurt and the soup is ready.
