Roasted bell pepper fritters
A quick and healthy vegetarian appetiser
Ingredient

Cooking instructions
* Step 1
In an oven roast the bell peppers (skin side up) for 20-25 minutes (if they get charred, its okay as this will give a smokey taste to them)
* Step 2
Allow the bell peppers to cool, then finely chop them and set aside
* Step 3
Mix the bell peppers and the rest of the ingredients, except for the vegetable oil
* Step 4
If the fritter batter becomes too thin, add a spoonful of gram flour at a time until you get the right consistency (the mixture should NOT be runny, rather should be able to hold well together)
* Step 5
On a parchment lined oven tray, arrange the prepared fritters and brush with 1 tbls of oil
* Step 6
Grill the fritters in the oven for 20 minutes (or until golden brown). Remove from oven, flip fritters, brush with the remainder tbls of oil and return to grill on the other side
* Step 7
Remove from oven, allow to cool and serve with your favourite side dipping sauce
