Banarasi Tomato Chat

Banarasi chat is quite unique and made without onion and garlic. I am sharing this tomato chat which I made with my own twist. Hope you will like this unique recipe.

Ingredient

Khoya(mava)

1 tablespoon

Ghee

4 tablespoon

Sugar

1 teaspoon

Chat masala

1/2 teaspoon

crushed Black pepper

1 teaspoon

red chilli flakes

1 teaspoon

minced Ginger

as needed

Oil

to taste

Salt

Cooking instructions

* Step 1

With 2-3 tablespoon of water soak 1 teaspoon of chilli flakes and 1 teaspoon of chopped ginger for 30 minutes. Grind to a paste.

Blanch 2 tomatoes in boiling water for 5 minutes.

Transfer the blanched tomatoes to a plate, remove the skin and blend to a puree.

Heat 1 tablespoon of oil and add in the chilli ginger paste.

Saute for a minute, add in 1 tablespoon of khoya and mix well.

When oil starts seperating from the spice, add in the tomato puree.

Also add in 1/4th cup of pomogranate juice, 1 teaspoon of kashmiri red chilli powder, 1/2 teaspoon of garam masala powder and salt.

Give a good mix and add 1 cup of water.

Cover and cook for about 5-6 minutes. Adjust the consistency, it should be light saucy consistency.

Sweet and tangy tomato sauce is ready. Remove fro heat and keep aside.

Boil potatoes in microwave for 4 minutes.

Remove the skin and cut potatoes in small cubes.

Deep fry them in hot oil to golden brown. Drain in a dish.

Toss these fried potatoes with roasted jeera powder, chat masala, amchoor powder, black pepper crush, chilli powder and salt. Keep aside.

Heat 1 tablespoon of oil and add in 2 tomato minced or roughly pureed.

Add in kashmiri red chilli powder, salt and sugar. Mix and cook for about 5 minutes in medium heat.

Now add in the prepared potato cubes and chopped coriander leaves.Mix well.

Press some of the potato cubes a little with the back side of your spatula. Remove from heat.

Make a light sugar syrup by boiling 2 tablespoon of sugar and 4 tablespoon of water for few minutes or until raw smell of sugar disappears. Keep aside.

Deep fry some spinach leaves to make them cruncy.

Melt 1 tablespoon of ghee.

For assembling take a serving plate and place a ring at the centre as shown in the picture.

Put some prepared tomato chat in the ring and press lightly so that they hold a shape.

Pour 1 tablespoon of sugar syrup over the chat.

Also pour 1teaspoon of melted ghee.

Top with some pomogranate pearls, cruncy spinach leaves and chopped coriander leaves.

Spread the sweet and tangy tomato sauce around the side of the ring.

Sprinkle some khoya crumbs and serve this unique and delicious chat.
