Sweet Potato Kebab

A very delicious and healthy kebab made with sweet potato and some other veggies. You can happily enjoy them during fast as these kebabs are made without onion and garlic and less spices.
Cooking instructions
* Step 1
Boil and mash both kinds of potatoes.
* Step 2
Assemble and prepare all the vegetables ready.
* Step 3
Heat 1 teaspoon of oil in pan and temper with cumin seeds.
* Step 4
Saute for few seconds and then add the veggies.
* Step 5
Stir fry the veggies for 2-3 minutes and then add the spices.
* Step 6
Stir and mix well with 3 tablespoon of water.
* Step 7
Cook for a minute and then add salt, coriander leaves and kasuri methi.
* Step 8
Mix and with the help of a potato masher mash the veggies a little bit. Slight mashing is good to use them in the kebab.
* Step 9
Veggies are now ready to use.

In a mixing bowl add sweet potato and potato mash.
* Step 12
Add the prepared veggies.
* Step 13
Mix well with your hand to make a little sticky mixture.
* Step 14
Add grated cheese and mix well.
* Step 15
Adjust seasoning in this stage, add salt if necessary.
* Step 16
Now make a patty out of a small lime size mixture.
* Step 17
Make all the patties out of the mixture and arrange them in a dusted plate.
* Step 18
Heat oil in a non stick pan.
* Step 19
Place 4 or 5 kebabs in the hot pan.
* Step 20
Shallow fry them in medium heat for 3-4 minutes and then flip them carefully.
* Step 21
Cook for more 2-3 minutes or until the kebabs are golden brown from both sides and firm in shape.
* Step 22
Transfer the kebabs in a plate.
* Step 23
Cook all the kebabs and serve them with yoghurt coriander raita.
