Carrot & Rice Kheer

Cooking instructions
* Step 1
Wash and soak basmati rice for 20 minutes. Drain the water and crush the rice with fingers.
* Step 2
Heat 2 tbsp ghee and fry grated carrot in a pressure cooker until color changes. Add in crushed rice grains and fry for a minute.
* Step 3
Add in milk, stir well and cook on low flame. When it comes to boil, cover with pressure cooker lid and continue to cook for 15-20 minutes on small burner in low flame.
* Step 4
Open the pressure cooker lid and check if the rice is cooked well. Add in sugar, stir well and let it boil for a minute. Switch off the flame and add in saffron strands, roasted cashew and badam. Cover and let it stand for 20 minutes before serving.
* Step 5
Transfer Carrot & Rice Kheer to serving bowl, garnish with chopped pista and serve warm or cold.
