Schezwan Chicken Fried Rice

Cooking instructions
* Step 1
Wash and soak Basmati rice for 30 minutes. In a pot take 3 cups of water and bring to boil. Add 1/2 tsp salt and soaked rice. Cook until it’s completely done. Drain the water completely, spread onto a plate and let it cool.
* Step 2
In a wok heat oil and add finely chopped ginger and garlic. Sauté for 30 seconds until aromatic. Add in chopped spring onion whites, bell pepper and sauté for a minute.
* Step 3
Add in boneless chicken cubes and sauté on high flame until it’s cooked. Add 1/2 tsp salt, pepper powder and mix to coat.
* Step 4
Add in Schezwan chutney and mix well to coat chicken with Schezwan chutney.
* Step 5
Add in rice and combine everything well. Take the wok off the flame.
* Step 6
Heat another pan. Break 2 eggs in a bowl and season with salt and pepper powder. Beat and add it to the greased pan. Scramble the eggs and cook until it’s done.
* Step 7
Add scrambled eggs and chopped spring onion greens to the fried rice. Mix gently.
* Step 8
Serve hot and spicy Schezwan Chicken Fried Rice.
