Chicken & Vegetables Stir-Fry Noodles

Chicken & Vegetables Stir-Fry Noodles

Cooking instructions

* Step 1

In a vessel take enough water and let it boil. Add salt, noodles and let it cook 90%. Strain the water and add 1 tbsp oil and coat the noodles.

Chop and keep all the vegetables ready. In a bowl take all chicken stock cube, add water and microwave for 20 seconds. for the cube to melt. Add remaining ingredients mentioned for sauce and mix well and keep aside. (Chicken stock or vegetable stock can be used instead of chicken stock and water)

* Step 3

In a plate take boneless chicken strips, add salt and pepper powder to taste and coat well. In a pan heat 1 tbsp olive oil, stir fry chicken for 2 -3 minutes until cooked and golden. Remove onto a plate and set aside.

* Step 4

In the same pan or large kadai heat 2 tbsp oil. Add in chopped vegetables and stir fry for 1 minute. Push the vegetables to side of the pan, add in chopped garlic, ginger, spring onion whites. Saute for 30 seconds and mix it with vegetables and continue to stir fry for another 2 minutes. Vegetables should be crunchy.

* Step 5

Now add in stir fried chicken, cooked noodles, and prepared sauce mixture and stir fry for 2 minutes. Check for seasoning, adjust salt and pepper powder as per taste. Add chopped spring onion greens and mix well until everything is incorporated together.

* Step 6

Transfer to serving bowl and garnish with spring onion greens. Chicken and vegetable stir-fry Noodles is ready to be served hot.
