Kinamatisang Alumahan (Striped Mackerel with Tomato)

Kinamatisang alumahan (striped mackerel) or fish in general is one of the simplest and known traditional fish recipe in the Philippines. It may not be seen on the menus of Filipino restaurants, but this has been a common dish on a Filipino table back in the day.

Ingredient

Food ration :

2 servings
6 cloves

garlic

2 pieces

red onion

20 grams

ginger

2 pieces

tomato

1/4 teaspoon

rock salt

1/4 teaspoon

ground black pepper

1 cup

water

Cooking instructions

* Step 1

Peel the garlic, red onion, and ginger and cut into slices. Wash the tomatoes and cut into strips. Gut the alumahan fish (striped mackerel) and clean under running water.

* Step 2

Place the fish on a pan and spread the rest of the ingredients on top and around it. Sprinkle with salt and pepper (just enough depending on your preference) and pour the water. Cover the pan with lid and simmer until there's almost no more liquid.

Serve hot and enjoy with steamed rice. Tip: Mash the tomatoes in rice for more flavorful tasting experience. @homebasedchef
