Spicy Potato Salad

Spicy Potato Salad

Although a nice variation of a standard dish that I stumbled upon whilst in Lebanon several years ago

Ingredient

Food ration :

6 servings

Cooking time :

45 mins
1/4 cup

olive oil

1 tablespoon

red wine vinegar

1/2 teaspoon

caraway seeds

Cooking instructions

* Step 1

Gently cook potatoes in a large pan of simmering water for 20 minutes or until tender but still firm, drain and set aside

* Step 2

Blanche the beans in boiling water for 2 minutes, or until bright green and just tender. Drain the years as well and set aside

* Step 3

To make dressing: whisk all ingredients in a small bowl for 2 minutes until well combined. Serve salad hot or cold, pour over dressing no more than 5 minutes before serving otherwise salad will discolour
