Spinach, mushrooms and other veggies quiche with blue cheese
First time to make quiche from scratch and it turned out so yummy!
Cooking instructions
* Step 1
Mix the ingredients of the dough and knead very well until you have a nice dough. Refrigerate for one hour to keep the dough together (you don't want the butter to melt)
* Step 3
In a frying pan, put some oil, add the garlic, celery, leek and fry for a few minutes until soft. Add the spinach and mushrooms in the end and cook for almost 2 minutes only (we don't want to overcook them because they'll be cooked in the oven inside the quiche later)
* Step 4
Get the dough, roll it out using a rolling pin then move it to a deep baking dish. The dough already contains butter which will keep it from sticking to the pan so no need to add oil or anything to the baking dish. Poke the dough with a fork
* Step 5
Put a baking sheet on top of the dough and use baking beads or chickpeas to add some weight on it so it doesn't rise. Bake in the oven for around 10 minutes, or until the edges are slightly golden brown
* Step 6
Take the beads and baking paper off then pop the dough again under the grill for a few minutes (to harden the base so it doesn't get soggy when you add the veggies)
* Step 7
Add the vegetables inside the baked dough, then in a separate bowl mix the egg with the cream and spices. Pour the mixture over the vegetables
* Step 8
Cover the top with mozzarella cheese and some blue cheese (add some mushrooms on top of the cheese if you want.. and I added some walnuts!!)
* Step 9
Bake again for almost 30 minutes at 180C, and another 5 minutes under the grill to get a golden brown top
* Step 10
Remove from the oven and set aside for 5 to 10 minutes before slicing
