Winter is especially the time to relish Gajar Halwa with Desi Gajar / Red carrot.
Children loves this Halwa and it's best way to make them have carrot.....so a special treat on Children's Day !
Taste good when still warm. Warm it while serving if its kept in the refrigerator. Can have it like a dessert or with Puri too, the combi is great.
This is my simplest way and less ingredients recipe to make delicious Desi Gajar Halwa.
Note:
If you like, you can add mawa/ khoya made from fresh milk and garnish with it too but I added milk powder and cooked in a litre of Full cream milk so skipped Mawa.
If you desire you can fry and add the cashew nuts but I skipped it.
No need to add food color, as the milk evaporates the halwa will get its lovely orange color.

Cooking instructions
* Step 1
In a pot, put the grated carrot, add Desi Ghee and mix well. Put it on the flame and saute it for 5-10 minutes. Add milk and let it come to boil and cook, in between add in the Cardamom seeds powder & milk powder too and mix well, cook till the milk reduces by more than 50%.
Add in the condensed milk and cook further for another half an hour or so, till all the moisture/ milk reduces and the ghee starts separating from the halwa. In the process of cooking, add in the cashew nuts too. Serve warm.
