Spicy Walnut Hummus

#walnuts #uae #bahrian #middleeast #arabiccuisine Hummus is a Middle Eastern Chickpea dip, a very healthy dip, traditionally prepared with soaked and boiled chickpeas with Tahini ( Sesame seed and Olive oil paste) along with other ingredients and enjoyed with Pita Bread/ Flat breads, kebabs, keema roti etc..Nowadays hummus has become very versatile and is used to prepare sandwiches, veg wraps etc and popular among the weight watchers and are in the list of healthy foods. In this recipe, I have given the traditional recipe a twist and have not used Tahini ( which I generally prepare fresh at home ) but instead used freshly made Walnut and Olive oil paste. My son doesn't like to have walnuts directly, so this is the best way to make him have walnut as he loves hummus. The cooking time doesn't include the chickpea overnight soaking time , boiling time ( 50 mins or so ) and cooling time ( 1-2 hours )

Cooking instructions

* Step 1

Boil the soaked chickpeas along with whole dry chillies as we are going to make spicy hummus, otherwise you can skip this, if you are making the simple hummus. Boil and cook for 50 minutes or so till the chickpeas are well cooked and turns soft. Let it cool and then take out the skin/chilka of the chickpea in order to get a smooth hummus or you can skip it too.

* Step 2

Chop the onion, coriander, chilli and deseed the tomato and chop that too. (If it's the basic simple hummus you don't require all these ingredients for Topping or Garnishing.) In a pan dry roast all the walnuts (30 gms) for 2 minutes or so, be careful not to over roast it.....put it in the mixer jar, keep few for Garnishing. Cool the walnut for a minute and add in the olive oil and make it into a fine paste.

* Step 3

Add the chickpeas, garlic cloves, salt as per taste, black pepper powder (optional) and cummin powder (optional) and half cup water and grind it for few minutes, scrap it and add another half cup water and again grind and blend till it forms a smooth paste. Check the salt, if required add some more. Add in the walnut olive oil paste, lemon juice and blend till it forms a homogeneous paste. Check the salt and tanginess once again add in if required.

* Step 4

Pour it a bowl and level and smoothen it and make a shallow well in the centre with the help of the back of a tablespoon, pour 1 tbsp Olive oil in it and Garnish / top it with Roasted walnuts, onion, tomato, chilli, coriander and serve it with Pita bread, kebabs etc.....we enjoyed it with Stuffed Keema Paratha. While having it simply mix in everything. Bon Appetite!!!
