Enchilada Pie - my oh my!

Cooking instructions
* Step 1
Heat an oven to 200 degrees! Chop the onion, spray oil into a frying pan, heat the pan on a medium high heat, add the onion then the peppers stirring well!
* Step 2
Once the onion is translucent add the beans and tomatoes! Stir again! Wrap up the tortillas in tin foil and warm in the oven!
* Step 3
Season well, throw in the spice and coriander and simmer for 5 minutes.
* Step 4
Take a casserole dish or frying pan that fits the tortillas! Layer up the ingredients!
* Step 5
Later by layer. The final
Layer top with the cheese, sour cream and coriander !
* Step 6
Finally grill under the oven until golden and bubbling! Serve!
