Watercress and Apple Soup
Watercress is a member of the mustard family and there is evidence of its use dating back to the Persians, Greeks and Romans. It is believed that Roman emperors ate watercress to help them make bold decisions and they treated insanity with vinegar and watercress. Hippocrates grew wild watercress in the natural springs in the gardens of his hospital on Kos around 400 BCE. It was used to treat blood disorders.

Cooking instructions
* Step 1
Melt the butter in a large pot and add half of the watercress in. Give it a stir and add the chopped apples, stock, nutmeg and season with salt. Bring to the boil, reduce the heat and simmer for 10 minutes until the apples are soft.
* Step 2
Add the remaining watercress and the lemon juice, leave to cool then blitz. Whisk through the Greek yoghurt and check the seasoning. Place in the fridge for several hours before serving.
